Happy Thanksgiving!
We call this "Spare the Turkey Day" – which does not mean having to sacrifice a wonderful meal shared with friends and family. Rather, we merely suggest preparing organic, sustainable, family-farm produced vegetables, grains and fruits!
Try an organic Acorn Squash!
Cut it in half and remove the seeds.
Spread a little organic Virgin Olive Oil on both sides.
Bake it at 425 for 40 minutes (or until tender with a fork),then sprinkle a little maple syrup, chopped nuts and dried fruits (your choice) into each cavity and then put it back in the oven for another 10 minutes!
This is a recipe that is so yummy and satisfying either as part of a main course, side dish or even dessert!
