Solar Vegan Rooty Tutti Fruity Cookies
At the recent Doof-a-Palooza event held at Google's headquarters, we got out the Solar cookers from the Solar Oven Society http://www.SolarOvens.org and whipped up some wonderful vegan oatmeal cookies (thanks to the complete assistance from the chefs at Google), and baked them in the sun for all the kids to learn about and enjoy.
We've been getting so many requests for the recipe, that we decided to post it on the blog, so here you go! (PS you don't need a solar oven to bake these delicious cookies, but it sure does taste better we think!).

Solar Vegan Rooty Tutti Fruity Cookie
| Organic ingredients where possible please: 1 cup soy faux-butter 1 cup brown sugar 1 cup cane sugar 2 tsp vanilla 2 tbs rice milk 6 tbs apple sauce
2 cup flour 1 tsp baking soda 1 tsp baking powder 1 tsp salt 2 tsp cinnamon 2 cups oats 1 mashed banana 1/5 cup each finely chopped dried cherries, papaya, ginger and pineapple; and cranberries and raisins
| Preheat oven to 350°. Combine margarine and the sugars and beat until creamy. Add vanilla, rice milk, and apple sauce and beat some more until evenly distributed & creamy. In a separate bowl combine flour, baking soda, baking powder, salt, and cinnamon until evenly mixed. Add dry ingredients & wet ingredients and mix together. Add the oats, ginger & dried fruits, & mashed banana. Mix together. Evenly place cookie dough clumps (approx ¾" diam) Put in the oven and bake for about 8-10 minutes, until they no longer look raw, even in the middles. Remove from cookie sheet soon after removing from oven -- don't let them cool on the sheet or they'll stick. Repeat steps 7-9 til all gone. Lick the bowl. No worries about salmonella or whatever it is people get from raw eggs cause there aren't any! |
